Uz albumin jaja sadr\u017ee i druge proteine kao konalbumin, ovomukoid, ovoglobulin, mucin, lizozim i avidin. Lizozim je bioaktivna molekula koja ima za\u0161titno djelovanje protiv bakterija, dok avidin ima antinutritivna svojstva koja se inhibiraju kada se bjelanjak kuha.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Proteini u \u017eumanjku jaja<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ve\u0107ina proteina u \u017eumanjku jaja vezana je lipidima u lipoproteine. Lipoproteini se dijele na dvije komponente: plazmu i granularnu frakciju. Granulatna frakcija sadr\u017ei fosfoprotein, poznat kao fosvitin, koji se sastoji od 54% serina. Serin je aminokiselina koja mo\u017ee djelovati kao prijenosnik kalcija ili \u017eeljeza u biolo\u0161kim sustavima.
